Tiramisu pudding pie

Who loves coffee and mocha flavored everything like I do? Give me ice cream, cake, cookies and pie! I’ll eat it all! I’m just a coffee lover!

I have GERD and had a really bad episode for a couple of months and stopped drinking coffee. It was so hard weaning myself off, but I had to in order to get my gut health back in check. I don‘t drink coffee because of the caffeine, although it helps, I drink it more for the flavor. I love the way coffee tastes with creamer. I’ll drink a cup or two, hot or iced, daily. I slowly introduced coffee back into my diet about a month or 2 ago and now I’m just hooked again lol :) I’m back on the daily cup of joe!

So for the love of that coffee flavor I made this tiramisu pudding pie! I don’t know what it is about pudding pies that I love. It must be the texture and that creaminess that I love so much.

This pie was fairly easy to make and put together. All you need are a couple of ingredients to make this coffee flavored YUMMINESS and it’s low carb and keto friendly too. No lady fingers in this tiramisu 😊

Andddd the best part! It’s no bake! Yup, no baking here. You’ll need a mixing bowl, refrigerator and a pie dish and you’re pretty much good to go.

For the crust I used a bag of Lolli’s cookie cluster in the Mocha Cappuccino flavor. This crust was perfect because it wasn’t too sweet and complimented the pudding perfectly. It has a little bit of crunch from the nuts, but soft enough to press down into the pie dish as well.

The tiramisu or coffee part of the pie is in the pudding. I used vanilla pudding from Simply Delish! This pudding is keto and low carb friendly and really easy to make. I did a little tweaking Of the recipe on the box to get the coffee flavor and it turned out delicious.


-1 bag of Mocha Cappuccino flavored Lolli’s

-1 box of Simply Delish vanilla instant pudding

-1 1/2 cups heavy whipping cream

-1 Tbsp vanilla extract

-4 Oz of hot water -2 Tbsp Bustello Instant coffee

-2 Tbsp Whole Earth monk fruit sweetener

-shot of rum (optional)

DIRECTIONS: -place contents of one bag of Lolli’s into a baking dish or pie dish and press down to form a crust. -mix 4oz hot water with 2 Tbsp Bustello instant coffee and Whole Earth Sweetener. Cool down to room temp. (add rum here) -beat HWC, vanilla and pudding mix with electric mixer until combined well and soft peaks form. -slowly add COOLED coffee mixture to pudding mix and mix until all combined. -Scoop pudding mixture onto crust and spread evenly. -Refrigerate before serving

Add whipped cream and dust with cinnamon or cocoa powder.
