When life gives you lemons and Kawaii Treats and Eats lemon bread mix,
you make a LEMON CHEESECAKE COFFEE CAKE
This recipe was inspired by a recipe I found online. I revised and tweaked the recipe a bit to
make this low carb, keto friendly, sugar free and gluten free.
This delicious cake was perfect with my morning cup of coffee. Nice breakfast treat and guilt free :)
It was tangy and sweet and moist. What a perfect treat!
Layers of lemon bread, homemade collagen lemon curd, cream cheese filling and a crumb topping.
Prepare Kawaii Treats and Eats Coffeehouse Lemon Bread Mix as instructed on packaging. Set aside.
1 cup almond flour
5 tbsp brown sugar alternative (I used Whole Earth Sweetener Allulose brown sugar baking blend)
3 tbsp granulated sugar alternative (I used Whole Earth Sweetener Allulose granulated baking blend)
4 tbsp Kerry Gold butter slightly melted
Combine all ingredients and set aside
HOMEMADE LEMON CURD:
1/2 cup fresh lemon juice
1 tsp lemon zest
1/2 cup granulated sugar alternative (I used Whole Earth Sweetener Allulose granulated baking blend)
2 whole eggs plus 1 egg yolk
3 Scoops of Vital Proteins Collagen
5 tbsp Kerry Gold butter
In a sauce pan melt butter and remove from heat. Mix in lemon juice, lemon zest, sugar and eggs. Mix well and place pan back on the stove on medium heat and cook until mixture thickens up. Set aside and let cool to room temp.
CREAM CHEESE FILLING:
8 oz cream cheese
1/2 tsp vanilla
3 tbsp sugar alternative (I used Whole Earth Sweetener Monk Fruit with Erythritol blend)
Beat all ingredients together with hand mixer or stand mixer until smooth. Set aside.
TIME TO LAYER THE CAKE, FILLINGS AND TOPPING:
Start by placing a piece of parchment paper down in your square baking pan/dish.
Take half of the bread mix and layer it on the bottom of your pan/dish.
Spread lemon curd over cake mix, but do not go all the way to the edges ( you will have extra lemon curd)
Spread remaining bread mix on top.
Next take your cream cheese filling and spread over the batter.
Finally sprinkle the crumb topping.
Bake at 350 degrees for about 45-50 minutes or until bread mix has cooked through. Careful not to overcook. If crumb topping starts to brown too quickly you can cover/tent with foil .
Let cake cool and then cut & serve with a cream cheese glaze or powdered sugar.
