Kimchi Cauliflower Fried Rice

An easy meal for one of those lazy days. I usually have all the ingredients needed at all times so this is a quick and easy meal I can whip up anytime.

I've got the kimchi, cause you know, gut health. I've got the SPAM because it's just one of those canned food staples in a Filipino household LOL ;) When you're keto, you know you always have that cauli rice ready and stocked up in the freezer and who doesn't have eggs?? Yup, that's all you need! Spam, Kimchi, Cauli rice and eggs. Oh maybe some olive oil or butter for frying.

First you'll need to cut up your SPAM into cubes and then fry those up in your choice of oil or butter. Once your SPAM has fried to your liking you'll add your Kimchi. Fry the kimchi until all the liquid has evaporated.

Next, you'll add your cauli rice. Fry this up until it's as dried out as you can get it without burning. Make a nice little hole in the center of your fried rice with enough room to crack your eggs into. You'll want to scramble your eggs in the center of your rice and mix/combine once the eggs are cooked.

Season with salt, pepper and garlic powder and voila!! Kimchi Cauli Fried Rice with spam and eggs.

Easy peasy right??
